Kalinga Unoy, locally known as Chong-ak, has a rare, delectable taste and aroma, which has been known to entice the entire village as it is cooking. This rice is served at festivals and ceremonies and is a beautiful, rusty red color on the plate. The Chong-ak variety has been designated to the Slow Food Foundation’s international “Ark of Taste”. Inclusion in the Ark means that the rice has met the foundation’s standards for taste quality, environmental sustainability and respect for the cultural identity of the producers.  It is delicate, sweet, and nutty, not quite like any rice you have ever had, and better! It works well as a side dish with any food, or try it as the focal point of your meal.
